Posole (or pozole) is a delicious Mexican soup, typically made with pork, chiles, hominy, and tasty toppings.

Making this in its traditional way is time-consuming; that why Mexico has often treated it for special occasions. But today we are making a low sodium version of pork posole in the instant pot that you can make every time you crave some posole. What are the ingredients for instant pot pork posole?

1 Tbsp olive oil: to saute the ingredients
1 cup chopped yellow onion: to enhance the flavor of the soup
3 garlic cloves, minced: Fresh is better
1 lb. ground pork: to make this soup less time consuming
1 tsp chili powder: Feel free to add more if you want it spicier
½ teaspoon ground cumin: Add the perfect touch of flavor
¼ teaspoon cayenne pepper: Feel free to add more if you want it spicier
Salt and pepper: to your taste
1 (15 oz.) unsalted diced tomatoes: to add more flavor and color
4 cup unsalted chicken broth: to add more flavor
1 cup water: you can use more broth if you want
1 (28 oz.) white hominy, rinse and drained: an essential ingredient for the recipe

What is hominy, you may ask?

Hominy is dried corn kernels that have been soaked in water with lime. During this process, the hulls are loosened from the kennels and soften the kernels. It is making the kernels to double in their size.

How to make pork posole in the instant pot?

Turn on your instant pot and select the sautee function. Heat olive oil in the pot adds onion, garlic pork, chili powder, ground cumin, cayenne pepper, salt, and pepper to taste, cook, saute for 5 minutes stirring often. Turn off the instant pot.

Add diced tomatoes, chicken broth and water, stir to blend. Close and lock the lid set cooker on low pressure, set timer for 20 minutes.

Release pressure using the natural release method. Unlock the lid and add hominy, stirring to blend.

Serve the soup into the bowls; top with any of the toppings you like from the options mention in this post below like cilantro and lime.

Ingredients
